Some Exo members, all RV members have done voice-overs and there are actually many idols who have that I cant exactly recall
Some like Key have done outfit designing for concerts and comebacks
A lot of rookies have been backup dancers before

Lyricists, during and after, is increasingly common.
KOMCA lists many.
VIXX Ravi, Suga, G Dragon, IU are among the most prolific idols who are also lyricists, songwriters, often producers.
Tablo had published a book, as a part of his masters in literature, I think before his fame or in early days.
And few have been backup dancers. Think Zico even had an uncredited part in one of IUs early MVs.
Particularly in the big 3, trainees play minor parts, back up dancers to the already popular label mates. Think Twice girls had few such.
So not that uncommon.
But editing might by rare.
Typically it is lyricists, songwriting, production, arrangements, choreography which are closely associated skills, idols would venture into.
fashion, modeling, acting, vlogging etc.. kind of goes with being an idol.

Rocky from Astro did the choreography for a 5urprise song when he was like 14. Eunwoo was also already working as a model (and I believe he already had CF contracts) before he debuted as an idol.
Kangta and BoA are creative directors as SM (at least I think they still are.)
There are also several idols who have or are working as radio DJs. I know Johnny and Jaehyun from NCT used to host a show.
