At this stage, I think any of BTS leaving would be pretty disastrous. A huge reason for the main success is their synergy as a seven.
BUT, I will say that I think the absence of Namjoon or Jungkook would not be easily recoverable from. I don’t think the group would have become what they are without Namjoon’s particular cultural/artistic perspective. Also Jungkook gave them a stability and softer edge with the quality of his vocals and opened them up to different possibilities musically.
Lack of Hobi would have made things spin very differently too. You can see the relief that they all felt when he came back to rehearse with them for the Grammys after quarantine.

For (G)I-DLE, it's definitely Soyeon. She's so heavily involved in the creation of their music that (G)I-DLE would not sound the same without her.
The other girls can and do make awesome songs (like Minnie's involvement on Change), but Soyeon touches every song these days. Her absence would change the entire group.

That's how it always goes, lol. I've been around in kpop long enough that the "the group could not function without ALL of them" is funny to me. I've heard that about SNSD, Big Bang, Super Junior, EXO, Wonder Girls, 2PM, etc. And we see how that went.
It's just a fact that most groups get their sound from either an outside producer or a core member or two who drives the direction and/or sound of the group.
Like, FT Island is my first group I stanned, but being 100% honest, Hongki is the core of the group; his vocals are so unique that FTI would not be FTI without him. He's not my favorite member, but FTI can (and did) weather Seunghyun leaving. Hell, Bol4 was a duo and still weathered one of the members leaving.
