Actual answer: 'cause the sound of Z is closer to the ㅈ letter in Korean than the ㅅ letter. In Korea, they're usually called 스키즈 (seu-ki-jeu/zeu), fully as 스트레이 키즈. And Z also matches the ds sound of the word Kids (and the aesthetic is a lot better!).
