$ April-May AKP Cooking Contest $

yay! another one, these are so fun! 2yr do we get more a higher chance of winning if it’s a simple recipe or is the more glamorous the better?

You need:

2 potato
1/2 sweet potato
1/2 zucchini
1 onion
2 eggs
50ml milk
50g grated cheese
Salt
Peper
dried herbs
Oil

1) Peel and than cut the onion and the vegetables into small pieces
2) Put a bit oil in a frying pan and steam the onions till they get slightly brown and crispy
3) Cook the vegetables in water till the are halfway cooked
4) Mix 2 eggs with the milk, salt, peper and the dryed herbs
5) Now put the vegetables into the frying pan and pour the egg over it
6) If the egg is halfway cooked take the grated cheese and put it on top than close the frying pan with a lid and let it cook untill the cheese is melted

I made a Spinach, Barley, Potato and Bacon Soup. Couldn't find Barley so used Farro as a substitute. Tasted good but didn't look as the Barley version. Farro clouded the broth and couldn't see the ingredients in the finished Soup. Seeing what you were eating was half the fun.

Farro does have same texture and taste of a Barley. Farro absorbs more fluid than Barley.

A lesson in cooking. But now to make something else for the contest.

Soup with Tuna Fish Sandwich and Oranges. Soup wasn't intended aesthetic. Liquid clouded and used too much Farro. Still very tasty. This type of soup pairs well with Meat Sandwiches (Meat and Potato theme).

Sale at the store for Chicken Breast (Skin and Bone in)($0.99/lb). In the Pressure cooker the Chicken Beast will cook and soften making removing the skin and bone very easy.

The Chicken stock will be the byproduct of cooking the Chicken in water.

It is a good time to clean out the Vegetable drawer by adding old produce to the Stock. I only had a half an Onion to throw in. Everything into the pot, Chickens breast skins and bones, that onion and water to fill the pot.

My experience using the Pressure Cooker cooking Chicken and making Chicken Stock. Filling Water to submerge the Chicken makes a strong Chicken Stock. All these Chicken Breast fit in a eight quart(liter) pot and just enough room to submerge them with water.

Settings 18 minutes at High temp with slow pressure release.

Note can Cook in large pot stove for thirty minutes on simmer an let cool for another hour. Slow cooking is very popular way to cook Chicken to become Shredded Chicken. Both make the Chicken Stock at the same time.

Still very hot removing the skin and bone from the breasts. Bones fall off and skin peels away so easy. Half the wish bone inside the first part of the breast is the trickiest part.

Five and half pounds of Chicken Breast(six) produced 2 Quarts(Liters) of shredded Chicken and 4 1/2 Quarts(Liters) Chicken Stock. One quart of the shredded chicken will be put in the freezer for later. Using chicken stock to submerge the shredded chicken will prevent freezer burn. All the Chicken Stocks will be put in the Freezer. Remaining shredded chicken is going to make the Tacos and Spaghetti Squash meals.

Taco - Shredded Chicken

Ingredients

2 cups - Shredded Chicken (makes six Tacos)

1 cup - Salsa or Picante

1 tbls - Taco seasoning (Chili, Cumin, Oregano, Garlic)

2 tsp - Hot Sauce

Sour Cream, Cheese, lettuce and Avocado

Taco Shells

Heat the taco shells and remove from oven. Spread Sour Cream inside the Shell. Slice of Cheese inside the shell.

Add the Chicken in a Sauce pan . Mix in the Salsa, seasoning and hot sauce. Chicken is already cooked so only reheat on stove.

Spoon Shredded Chicken into Taco shells. Add the Avocado and lettuce. Ready to eat.

It should be seasoned enough without extra sauces.

Hints : Avocado submerged in water keeps it nice and green. Extra Avocado in the coffee cup goes in the refrigerator staying fresh for days.

Review : Ortega Taco shells are bigger than El Paso shells.

I had a Pepsi Zero with these Tacos.

Directions - Cook the Squash first. Fill half the Squash with ingredients and Bake to reheat.

How do they make the yellowish soft tortilla in your neighborhood? Do they add cornmeal in wheat dough?

I will be able to make good tacos here on classic soft / hard shell tortilla that are hard to find from those factory ready made here .. i think good tortilla is supposed to be like naan bread that swelled up on the surface ,air inside and fluffy after baking on flat top, chewy , charred, wheaty / corn aroma. If that works then Asian version taco on its way..

I used store bought Taco Shells. Directions say to heat them a few minutes.

That is impressive making Taco Shells from flat Tortillas. Online videos show frying or baking them. The Fried ones look awesome. Baked ones look easy to make. I haven't tried making Taco Shells. Store bought pre-made Taco shells look like their baked. They Crunch and break up easy. There is a Fast Food that offers Tacos with shells that could break teeth. Xd

Can use Corn Chips with ingredient spread over them. Taco-Nacho

Wow, congrats everyone and thanks 2yr for this contest. It was fun to participate and honor to compete with AKP Chefs and Bakers.

This round sure upped the game in presentation. Meals looked delicious and beautiful.

INGREDIENTS

Nutrition

• 1 ¹⁄₂ cups sugar (300 gms)
• ¹⁄₂ cup butter (1 stick, 114 gms)
• ²⁄₃ cup evaporated milk (5 oz can)
• 1 (7 ounce) jar marshmallow creme
• 1 pinch salt
• 3 cups semi-sweet chocolate chips (1 1/2 12 oz bags)
• ¹⁄₂ teaspoon vanilla extract
• 2 cups chopped walnuts (optional)
• 1 cup milk chocolate chips (optional)

DIRECTIONS

• Lightly grease a foil-lined 9x9x2 inch pan; set aside.
• Heat sugar, butter, evaporated milk, marshmallow, salt in a 3 quart sauce pan over a medium heat until it comes to a boil, stirring constantly.
• Boil and stir for exactly 5 minutes.
• Add chocolate chips and vanilla extract.
• Stir until smooth.
• Stir in optional walnuts.
• Spread into pan, sprinkle with optional milk chocolate chips, more nuts, coconut and/or mini-marshmallows.
• Refrigerate overnight, carefully turn out onto a cutting board, remove foil, flip back over and cut into 1-inch squares.

Pork Sirloin Roast - Open Face Sandwich.

Seared the Roast few minutes on each side. Coated the Roast with brown sugar and enclosed in Foil. On a cookie sheet cooked the Roast to 170F 77C internal temperature.

Slices of Roast placed on top of Bread and spread with Kraft Spicy Honey sauce.

Salad, Coke, Pineapple and Asparagus.(Sauce mayonnaise and worcestershire)
