they take risks in concepts and songs and people love being surprised. other companies/groups almost always go the safe route but sm always go for the crazy stuff like 3 in 1 type of songs, hieronymous bousch concept, i mean even the ai concept we all know how heavily criticized it was before aespa debuted.
It does help that they have really catchy songs and can afford top producers and execs for their groups

They don't put out the same stuff again and again and again and again.
They aren't afraid to mix it up.
I legitimately don't think they care about winning music shows etc (if they did they'd schedule comebacks better).
So people will always check in and see what they are up to now.
Also helps that they pick their idols really well overall, and train them really well.

Others are also trying. But their fans are not that easy to brainwash like sm stans.

SNSD's last songs were 5 years ago and none of them were big hits. They did medicore, even OhGG didn't do very well.
Their solo work is carried completely by Taeyeon since none of the other members can score a single hit these last years.
Exo's last song fell out of the melon top 1000 in like 2 months and it pretty much considered a hard flop. They arguably haven't had a hit song that wasn't fandom pushed in years.
Boa? Yeah nope. Where is her career these last 5-10 years? No where.
Red Velvet are the only ones doing well overall. Sure Boa and Hyo are leeching off the Aespa driven success of GOT. Legit that's carried all by Winter's buzz.
Stop rewriting history. Groups from SM that haven't scored a hit in years include Exo, NCT, Suju, SNSD, Shinee, etc. Few of them are doing anything on Youtube or Spotify either. Delulu company stans.

Diversity and being always changing.
Sm groups are very versatile so they can switch sounds and concepts much more often their peers which means they can keep with current trends or create new trends. That at least means people will keep checking out their music instead of getting bored.
Branching out outside music. Acting, tv, soloists etc. A lot of SM idols gain new fans when they start doing stuff away from their groups and that in turn can create new fans. Key for example is having a huge surge in popularity from I Live Alone and Amazing Saturday, now he’s one one of the most in demand and popular idols around. How many second gen idols can say that?
SNSD is of course the ultimate example as they all have very solid solo careers away from the group and are still relevant despite being 2 generations old.

Some people just can't seem to handle it well when groups of a company they hate are doing well

Even with some of the older groups and their "flopping", most newer groups would kill to flop like Exo, NCT, Suju, Shinee etc.
I mean, even if you want to say that only Aespa and Red Velvet are doing well.... let's count the number of groups doing well from other big companies.....
Hybe - BTS, SVT (which they bought) arguable TXT and Enhypen - 2 + 2half groups maybe
JYP - debatable for all their groups tbh. Twice and Itzy have declined, SKZ have minimal impact in Korea. So let's say 2 groups.
What other groups could we count and how many of them have another top group in the label?
Ive/Starship? No, maybe a half for MonstaX
OMG/WM? Do they even have a boy group?

Just a few of their acts being liked by korean gp.
But gp can move on to the next interesting thing in a year at best

Gp hasn't moved on from Taeyeon/SNSD since 2007 and red velvet and they debuted 8 years ago lmao
you can't drag SM for their longevity, that's where tehir acts do the best. Even shinee outcharts all the active 2nd gen bgs that used to do better than them
