I feel vaguely ill just looking at the photo.
It looks completely rare. Like it'd start screaming the moment I stab it with a fork.
Seriously though, I can't eat rare meat. It has to be well done. Everything else comes back up.

medium rare is the perfect cooking style for steak right?
I get the prime rib in OP pic is to showcase quality US grain fed beef , can be dry-aged, tender, not gamey that tastes good at the displayed doneness in picture .
US grain fed beef still gained higher market worth than that of Australian as a whole for better flavor off longer grain fed time. Not referring to the Wagyu beef from both places, its a different gig.
Personal preference after all tho.

Bloody rare on top of buttery flavorful and tender, US beef still beats other beef to it in my opinion.
