I actually love how versatile Korean dishes are.
I bought a tub of gochujang and I'm able to make all kinds of things with it depending on what kind of stuff I have left over in the fridge.
They have a decent Korean BBQ poboy around here which I really enjoy.

I live in a pretty small southern town in Louisiana and I was surprised and excited when the little Korean bakery/restaurant opened up.

Can't go wrong with bugolgi anything. I've eaten at a high end KBBQ in Seoul and a mom and pop's place at the local giant Asian grocer. The baseline for all my experiences was "delicious"
I'm thinking of branching out to all the Korean...soups? If you go to enough Korean restaurants, you'll know these usually have their own page on the menu. Sometimes two. I'm never adventurous enough to choose them over my usual favorite dishes.
Also, while it's not strictly "Korean" per say (I think it originated in China but don't quote me on that), I love Jjajangmyeon.

No one talks about it, everyone's obsessed with samgyeopsal, beef, tteokkbokki, and all the nasty ass stuff our faves eat (intestines, raw beef, raw octopus, chicken feet 
), but this right here is clearly Korea's national dish. It's amazing. Even the mediocre versions of this are yummy.
