i don't think it's too late, honestly op will always be fun to watch no matter where you pick it. I stopped before timeskip because there's just too much and I'm not into getting too involved with fiction works but I've seen a lot of spoilers and it's really amazing. Oda always give interesting backstories to every character and the cast is extremely large and diverse. There's a lot of plot twists, emotional moments and details no one notice at first but return later. The worldbuilding is also one of the best I ever seen, it's comparable to Star Wars, Harry Potter and Game of Thrones. On top of all I listed, it's hilarious.
I suggest you to watch just for curiosity when you're bored.
Tbh One Piece is not my favorite anime, but it's definitely one of the best I ever watched.
