OTG is over-processed to the point of being comical. Compare her vocal sound on the first lines of the song to how she sounds in the first "look at me I'm never comin down". Totally different, because there's so much processing on the rest of the track she might as well be singing through a vocoder.
Like Water has more natural vocals (don't get me wrong, there's still some processing there, but it's a WHOLE lot less).
If you have two tracks to showcase a singer who's supposed to be one of your main vocals, why not just let them sing, why distort the heck out of their voice? idgi. So Like Water for me. At least when she's in full belt, you can actually hear what she sounds like.

The concept is that if people vote for trainees and form emotional attachments to the group because they care whether or not they'll be eliminated, they'll follow them and spend more money on them after they debut.
That's it, that's the whole concept.
So Iz*One was put together after a survival show, and never intended to last long, because if the company keeps supporting the group, they can't do another survivor show. The whole cycle lets the company do a survivor show, keep the group while they're still in public consciousness (because emotional attachment to who they voted for), then send the trainees on to maybe debut elsewhere and anchor those groups by drawing attention and already being popular while the company does another survivor show.

DNA tests have other purposes than parental testing. If they were mandatory, the companies wouldn't necessarily have to include parental data with the results. But DNA tests can tell you if the child has an abnormality or disease that could be dangerous, and allow them to get treatment or plan for accomodations at the earliest opportunity. I think that's valuable enough to mandate them. Just write into the law that parental data won't be included unless requested.

Ancient Magus's Bride was good, from lately. Also a fairly short series, so easy to get through quickly.
Chihayafuru, which sounds like it has an odd premise but turns out to be a really sweet drama
Last Exile is... flawed but good.
Code Geass is... flawed. Some people like it, I quit four episodes in because the characters were insufferable.
