I went to Paris over Christmas break, the second time I've been there since 5 years ago, and the food experience wasn't that good (again). I wanted to give it a chance and start over fresh, but it was really uncomfortable. I don't care how fancy or overpriced it is.
Is French cuisine overrated?

Depends where you ate. In Paris there's a lot of overpriced restaurants with bad food. Mostly in the very touristic places.

Regular french foods are too bland for my taste buds

I don't have experience with French cousine in particular but if you find the food overpriced on vacation it's most likely because you're eating in places targeting tourists. Usually a key rule when visiting another country is that cheaper=better+more authentic. Move away from the big shopping streets til the people you see are mostly locals and you'll find the best food.

I like french cuisine, it's great but you definitely have to find the right place to try the dishes. In my opinion (as someone who trained to be a chef) it's the type of food that needs attention to details to be prepared properly and especially very good ingredients.... Actually it's also difficult to talk about french cuisine as one because of the regional differences
