this is the mistake that tourist do they think that because the place is nice and the food pricey it'll be good
but the best food is most often in the little brewery in Paris and not in the nice , classy and overprice restaurant

I don't have experience with French cousine in particular but if you find the food overpriced on vacation it's most likely because you're eating in places targeting tourists. Usually a key rule when visiting another country is that cheaper=better+more authentic. Move away from the big shopping streets til the people you see are mostly locals and you'll find the best food.

I like french cuisine, it's great but you definitely have to find the right place to try the dishes. In my opinion (as someone who trained to be a chef) it's the type of food that needs attention to details to be prepared properly and especially very good ingredients.... Actually it's also difficult to talk about french cuisine as one because of the regional differences
