For me, I prefer egg white in boiled egg and egg yolk in fried egg. But if I have to chose one then egg whites!
Eggs are so versatile in pastries...
The yolk is used for creamy textures and emulsify fat and water... The yolk doesn't have the sulfuric taste so if you want to make something richer, you ain't gonna taste the egg if only th yolk is used
The white has the sulfuric taste that you like or not... It's really useful to make airy texture to your dish without baking powder.

I actually prefer the egg whites and not cause it's healthier. Meringue anyone?? I order my eggs over hard and skip the yolk. No runny yolk either!!
