i just read their name as steak-- and like steak, they're pretty damn good. side note: is it "should have" or "should of"? i'm not a native english speaker but i think the first one makes more sense. correct me if i'm wrong though
english speakers are disgustingly bad at their own language

FWIW: You are correct. Should have or should've. Sometimes "shoulda" is used from a slang perspective, but it's not grammatically correct, of course.
Oh yikes, I just checked, Webster's is allowing shoulda as "informal speech" and defining in their dictionary. That hurts.
