There are (at least I know here in Germany) soooooooo many options of vegan products made from beans or peas or other veggies that have a lot protein, also eggs and products made from egg
Also here in Germany the selection is so big, you have it very easy to become vegetarian or vegan + it's also not that expensive
This is how it looks like when grocery shopping for vegan or vegetarian food here in Germany:

I'm a vegetarian/pescatarian (my doctor told me to eat some fish from time to time).
For protein, I mainly eat products made of soi, such as tofu, soy cutlets etc., chickpeas, eggs but also all kinds of nuts and seeds, groats and lentils. Lots of green veggies help too. Peanut butter has a lot of protein as well, I eat a spoonful every day with my oatmeal.
I don't know if that will help, but aside from protein people who don't eat meat can also struggle with low iron. I've had anemia but only this year one doctor told me that it's very important to supplement vitamin B12, so that all the iron from food will stay in my body. No one ever told me that before, so maybe there's more people who don't know.

As a vegetarian, getting enough protein can feel tricky initially, but there are many options once you get into it. My go-to is a mix of things so I don't get bored. Lentils and chickpeas are staples for me—hummus is fantastic, and lentil soups or curries are super filling. Tofu and tempeh are also great. I try to add them to stir-fries or marinate them for extra flavor. Eggs and Greek yogurt are solid choices, too, if you eat dairy.
I go for organic whey protein when I need a quick protein boost. It mixes well in smoothies; I like it after workouts or when I’m in a rush. Quinoa is another favorite—it’s a grain but also packs a decent protein punch. Nuts, seeds, and even nut butter are excellent snacks that add protein throughout the day.
