If you keep them in small tank and mistreat them. Keep them in a proper pond or in the wild (they are considered an invasive species, don't throw them in any lake), they will grow a lot.

They are just fancy carps. I imagine they taste similar to carps.

I'd avoid eating dead ones, as you probably dunno for how long or why it died. If you iced it immediately and you know it wasn't because disease or parasite, probably it's fine. However, depending on what chemicals you use in your tank, I'd avoid eating them.
