healthy banana monkey bread in a mug!
it takes 5 minutes to make and is pretty simple!
(ahh i’m so sorry! i have two photos, i didn’t realise until much later in the day that i had forgotten to put the handwritten note in it! i have 2 pictures)
and here are the ingredients~! (i’ve bolded them out since i’ve also added the instructions in)
1/2 a large slightly overripe banana
1 tsp soft coconut oil (it’s not rly necessary but it enhances the flavour and makes it soft and pillowy!)
4 tbsp all purpose flour
3/4 tsp baking powder
a tiny pinch of salt (like 1/8 of a tsp tiny)
and almond milk if you need it (can be subbed with any milk)
you mush the bananas first until smooth with a fork, then add the coconut oil until well mixed. Then add of the dry ingredients for the dough until it forms...well, dough. Don’t over mix it, or the dough will end up tough. It should be soft and a little sticky (if it hasn’t come together add a little bit more flour).
Lightly flour it and lay it out on a flat surface, don’t roll it out okay? Fold it in half once, and then flatten it a little and then in half a second time.
Now gently form it into a nice dome shape! Once that’s done, cut it up into 6-8 segments and then...
coconut sugar mixture:
1 tbsp coconut sugar
1 tsp cinnamon
roll the pieces into balls and roll it in the dry mixture! do this to all of your balls and lay them like babies into a mug.
final touch you’ll need is...
2 and 1/2 tbsp coconut sugar
2 tbsp canned coconut milk cream (that’s the hardened thick white part of a chilled or unshaken can)
a pinch of salt
now mix mix mix! Microwave the combined wet ingredients for 30 secs. And then pour it over the balls in the mug.
Microwave it for ~90 seconds and enjoy!
