The only way to guarantee that your text will be easily legible on every theme is to use the default color by selecting "remove color".

If you want to use different colors, try to stick to the mid range of colors that aren't too bright, too dark, too saturated, or too unsaturated. These colors aren't really great choices. These colors should be okay though.
