A classic French cooking?

Would you call the scenes in video authentic French cooking and classic French cuisines?

In the video I saw a bull's head, sea turtle soup, quail alike birds ..

Different wines and liquor used in cooking.

French friends here please drop comments..and how do you guys manage bull's head for a dish?

We don't eat turtles, or at least not nowadays. They are protected so if a restaurant sell this, they would be sanctioned.
