i'm into skin scents like byredo's mojave ghost, replica's matcha meditation and diptyque's philosykos (yes i bought it bc of jin, sue me) but i feel adventurous and want something more strong? or not exactly heady but definitely recognized?
and as you can see my knowledge of perfume is no further from sephora aisles so do tell me if you know something niche

my bf wears Commes Des Garcons, either Incense: Kyoto or Wonderwood depending on the weather/temperature out. they're a bit more recognisable but still on the clean/polite side. they're marketed as unisex but are slightly masculine IRL
I like to wear Angeli Di Firenze these days, but I think that's quite feminine

I need to try the CDG scents you mentioned. I looked them up, and they seem right up my alley. They seem like they would be good for the fall and winter coming up.
I rotate between Bleu de Chanel and YSL Y EDP as my spring-summer fragrances. Kinda generic and basic, I know, but I like them. I look forward to something nice and cozy for the colder times ahead.

the caveats with the CdG scents is that they're a little understated (in terms of how far they reach and how long they last) which I think lines up with the Japanese approach to perfume in general
that said, they are GORGEOUSLY smoky and inviting. Wonderwood is a distinctly great F/W perfume, whereas Kyoto is a bit more out-there and experimental, almost like a non-perfume approach to perfume

the only CDG perfume i've sniffed is amazingreen and floriental long time ago, both are really good! the green or woody notes are so particular. they're definitely not on the blind buy scent, will try!
santa maria novella is not a brand i'm very aware of, is it in general similar to acqua di parma?
My most favorite perfume for myself is Hermès’ Le Jardin de Monsieur Li - a light, clean citrus Kumquat! floral that is not sweet or too strong! I wear this in the summer or hot humid days.

I love terre d’hermes but that’s an ex’s go to perfume lolololooool hermes perfume in general feels warm to me, very grounding. The only one i’m not particular with is twilly (i forget which one) because it reminds me of a plane full of tourists. Yeah i know it’s weird, but i swear many women tourists smells like twilly

SMN is pretty light and kind of old-fashioned i reckon. If acqua di parma is all about citrus, then SMN is more geared to light florals and a little italian citrus also
to me they smell like how a lot of lana del rey songs sound, there's a haziness there that never gets heady, and its never too sweet

Aah if so just like yinye said hermes is definitely right up your alley, their perfume can be a bit mature but well blended, run warm for me but the choice is not restricted to vanilla/ gourmand. Even their edt projects well
I think the easier way to go beyond comfort zone is buying discovery set from department stores or beauty shop like sephora. They are usually more strictly curated than the ones from a single brand while also hold more variety, so you can explore which notes is in your liking. Or you can be cheapo like me and be a sniffing gremlin at perfume boutiques 
this! good shops will let you hang around and sniff like a gremlin, there's no rush really
