What is your favorite Italian Food??

White Clam Sauce Linguine. The chopped clam version not the whole clam shell version.

Only had it from Restaurants. Looks easy to make from recipe or canned sauces.

I have 2: pumpkin risotto, delicate but flavorful at the same time and pasta alla norma : pasta with eggplant, tomato sauce basil and ricotta...it reminds me of summer

Anyone have a good recipe or tips on making good marina sauce from scratch?

Ragu Bolognese, pizza (the real ones), cheese (parmesan, pecorino, gorgonzola, mozzarella)

Aubergine Parmigiana :). The way they make it at my work is by first salting aubergine and then drying, dredging in flour and then an egg batter before shallow frying. Then layering it between slices of mozzarella and Napoli sauce. Im pretty sure it's not at all the traditional way but it tastes great

Risotto ai funghi (mushroom risotto) comes to mind.

Pizza and lasagna.
