Anything is fine, everyone has a different taste in anime, so you can recc anything. Just as long it appropriate :)

Some random recs:
Gunbuster/Aim to the Top!: if you liked Evangelion or TTGL, I think this is a must watch. It's not really that obscure, but it's old (late 80s), so maybe some people don't check it because of that. I think this one holds up pretty well. It's short (just 6 episodes). After that you can try the early 2000s sequel, Diebuster/Gunbuster 2/Aim to the Top 2! Also, just 6 episodes.
Zipang (mid 2000s): usually anime avoids WW2 stuff, so this is a pretty rare setting. It has a mix of historical and sci-fi with time travel/isekai (not the new isekai of today). This isn't your usual anime fanfare. It's more grounded and realistic take on the themes. The only con may be the art style which is a bit weak. It's the kind of anime you watch for the story and not characters. If you like WW2, WW2 naval warfare, good drama with decent storytelling, this is a good check. Just 26 episodes.
Potemayo (2007): I don't see many recommend this one when they mention slice-of-life. I think a pretty unique one. It's wacky and weird with slapstick, visual gag, deadpan, and very sweet moments with very adult jokes and some touchy dramatic moments. Just a weird and wonderful mix. It's just 12 episodes and some extra episodes that are worthy watching.
