I've seen lots of them. Lots of Kurosawa of course. Lots of Kenji Mizoguchi too which I like very much.
A favorite movie series of mine is Zatoichi which tells the adventures of a blind masseur who happens to be a great swordsman despite his lack of sight. He travels the roads and villages of Japan and always ends up getting involved in yakuza clans shenanigans.
Masaki Kobayashi's Harakiri (1962) is an absolute classic too.
Other recommendations:
Lady Snowblood (Toshiya Fujita, 1973) starring the amazing Meiko Kaji
Love Letter (Shunji Iwai, 1995)
Kamikaze Girls (Tetsuya Nakashima, 2004)
And of course, lots of animated movies!

Akira Kurosawa films are great, some of it remade by us, such as 'Seven Samurai" as "The magnificent seven" etc. The cinematography are great, his films are about morality, heroism well more than that since i have watched only 2-3 films from him, but he is one of the most influential person on film industry.
I would recommend his movies such as Yojimbo, Throne of Blood etc
Battle Royale - in a nutshell its Hunger Games, but this film was released even 8 years befoe the Hunger games novel, very disturbing film, but reallly great, the atmosphere & feel is very different

The world of Kanako - this is also very disturbing film, desperate father tries to find his missing girl, but his girl had way different life he has imagined,
