The use of oignon looks new, maybe he wanted to add the caramelized taste of oignon into his sauce.
Most Filipinos also add eggs and potatoes to adobo, to make it more filling (especially when there are more people eating).
Another thing is calamansi (small green lemon-like fruit here) is better for chicken adobo than vinegar. Vinegar seems to vibe with pork adobo more, though.
