Basicly said you have cake, put a outer ring of metal or plastic on it that is higher than the cake, than you make a cream with decorations or different colors that is not stiff but very runny and when you remove the outer ring the cream runs down the cake ... I saw this technic in a lot videos recently and first ever came across it as a German Youtuber made such a cake in 2020
