I used to always get this Canto-Western fusion dish at Cha chaan tengs when I'm in Hong Kong during my lunch break. Baked seafood rice. A creamy mixed seafood casserole with fried rice as the base, topped with a generous amount of cheese. So freaking good.

That dish looks delicious (and remind me a bit of "riso patate e cozze": rice, potatoes and mussels that's made in southern Italy)
I really like chifa food, a mix of Peruvian and Chinese ingredients and culinary techniques.
Also I'm Italian-japanese, growing up my mom and dad often used a mix of ingredients of both cultures to cook imo the dishes were often pretty good

My favorite inauthentic/fusion dish would have to be Korean-Mexican tacos.
